Mulled Cranberry Tea | Holiday Recipe



Angi, from A Return to Simplicity, and I have collaborated to bring you a recipe for our favorite holiday teas. She has given me her mulled cranberry tea recipe and I've given her my vanilla chai tea recipe. Be sure to check out Angi making my tea in her video.



The following is Angi's recipe. Please note: I brewed the tea bags in the slow cooker the entire cooking time, wheras Angi's recipe suggests you take the teabags out before starting the slow cooker. My recipe turned out great so either method is fine.

Mulled Cranberry Tea

2 black tea bags
1 cup boiling water
1 bottle (48oz) cranberry juice
1-3 Tablespoons honey (to taste)
1 large lemon sliced
4 cinnamon sticks
6 whole cloves

Place tea bags in crockpot. Pour boiling water over tea bags, cover and let steep 5 minutes. Remove and discard tea bags.

Stir in cranberry juice, honey, lemon slices, cinnamon sticks, and cloves. Cover, cook on LOW 2-3 hours or on HIGH 1-2 hours.

Strain before serving.


This tea was so delicious and easy to make. I had unexpected company the day I made this and it was so nice to offer them such a special drink. This would be excellent for any holiday gathering. Slow Cooker Turkey Lentil Chili | Fall Recipe



Today's video shares a hearty and healthful turkey lentil chili recipe for you to make in the slow cooker. It's perfect for a chilly, autumn day. Make it in the morning and enjoy it in the evening! Feel free to substitute the vegetables and spices I used for whatever you have in your kitchen.



Slow Cooker Turkey Lentil Chili with Vegetables
Serves 8

1 lb ground turkey
1 medium onion, chopped
2 garlic cloves, minced
1 6oz can tomato paste
1 tsp salt
pepper
1 cup dry green lentils
2 cups water
1 8oz can tomato sauce
1 8oz can diced tomatoes
1 4oz can diced green chiles, drained
1 tsp cumin seeds
2 celery sticks, chopped
1 red pepper, chopped

For garnish: chopped cilantro, sliced scallions, sour cream and avocado

In a skillet over medium heat, brown the ground turkey with a dash of olive oil. Add the onions and garlic, salt and pepper. Cook 2 minutes. Add the tomato paste to coat. Transfer the turkey mixture and add it to the slow cooker. Add the lentils, water, tomatoes, green chiles, cumin seeds (or whatever spices you'd like to use), celery and red pepper. Stir to combine. Cook on slow for 8 hours, or high for 4 hours. Garnish with chopped cilantro, scallions, sour cream and avocado... even cheese! Enjoy.

Slow Cooker Coconut Chicken Curry | Easy Recipe



After reading Queen Lucia, I have had curries on my mind. Can you tell? First, I made an Authentic Indian Chicken Curry and in today's video, I'm making a mild coconut chicken curry in the slow cooker. I make this dish regularly and my children love it.

Slow Cooker Coconut Chicken Curry
serves 4

4 boneless skinless chicken breasts
4 medium potatoes, peeled and chopped
1 medium onion, chopped
1 14oz can coconut milk
1 cup chicken broth
1 1/2 tsp curry powder
salt and pepper to taste
1 10oz package frozen peas, thawed
cilantro and green onion, chopped

Place potatoes and onion in the bottom of a slow cooker. Place the chicken on top. In a bowl, combine the coconut milk, chicken broth, curry powder, salt and pepper. Stir, then pour over the chicken. Cook on low for 8 hours. A half hour before the cook time is finished, add the thawed peas. Continue cooking for 30 minutes. Serve the curry over rice and garnish with cilantro and green onion. Enjoy!

Slow Cooker Apple Breakfast Cobbler



Today I'm showing you a slow cooker apple breakfast cobbler that you can assemble the night before.







Feel free to make substitutions. Instead of butter, you can use coconut oil. You can use coconut sugar instead of brown sugar. Or you can omit the sugar entirely. This recipe is very customizable. My kids love this breakfast and when we serve it with a dollop of vanilla yogurt, it tastes like a decadent dessert!

Slow Cooker Roast Chicken with Vegetables



To all of my fellow Americans, Happy Independence Day!

We are taking a break from the Q&As (you can see the last one in the pre-recorded series next week) for an easy slow cooker recipe that your family will love: roast chicken with vegetables.

The chicken comes out tasting like a rotisserie chicken, succulent and juicy with a crispy outer edge (thanks to my special trick!). I love using the crockpot because it just takes a little preparation in the morning and voil�, you have a home-cooked meal waiting for you in the evening. This recipe uses a homemade rub for the chicken, but you can use any rub you like. Lemon pepper would also be nice, as would plain salt and pepper.



Slow Cooker Roast Chicken with Vegetables

1 whole cut up chicken (with skin)
3 to 4 cups of chopped vegetables (I use carrot, celery, potato, onion and garlic)

Rub (or use whatever rub you like)
2 tsp paprika
2 tsp onion powder
1/2 tsp garlic powder
2 tsp thyme
salt and pepper

Directions: Chop vegetables and place them in the slow cooker. Take the cut up chicken and rub generously with the rub. (Make sure the rub is fully mixed together before placing on the chicken.) Place chicken on top of the vegetables. Cover. Cook on low 8 hours or high for 3 1/2 to 4 hours.

When you are ready to eat, take the chicken out and place under a broiler, checking every two minutes (6 minutes worked for me). This will make the skin crispy.

Serve with vegetables and jus from the crockpot. Sprinkle with pepper and garnish with parsley, if desired. Enjoy!

When you plan, you avoid the potential for associating the things you own with negative emotions like guilt or financial stress.

Dear Lillian, you present a wonderful example of the correct way to shop for the ten-item wardrobe. In your case, with the swimsuit, you are talking about shopping for the "extras". After adopting this more mindful way of shopping, you will do this with everything you buy. No more impulse purchases! No more being swayed by marketing and sales! It truly is wonderful.

The 10 item wardrobe concept is a God-send to me. I'm nearing 60 years old and am petite. Finding clothes is difficult when you're a 00P or 0P. Initially I felt great relief that I didn't have to find a closet-full of clothes--only a few items.

I've been amazed at the combinations I have. It's stretched me to look harder for the possibilities in front of me and I'm pleased.

Here's something that helps me look and feel chic most days even if I'm just staying home with my kids. I put my hair in an easy and elegant updo (It's soooo hot in Atlanta now!), polish my toenails, and put on earrings and a necklace. I might only be wearing shorts and a plain t-shirt, but the little extras make you look and feel more polished. I do the simple makeup routine daily with makeup from Target. You don't have to spend huge amounts of $$$$ to be chic.
